I think that Verizon was still selling the service initially when I got mine. They are not today. Just a guess would be to use Buzz's Ubuntu boot USB stick and edit the startup so it doesn't present the Verizon GUI.

Play a bit with the booting to a terminal image. This one is very simple. Boots to a terminal session only. There is the test directory there with the DECT tools.

Here is a picture (just an FYI) of the labels on the O2 Joggler, Openpeak 1 and 2. Note that the O2 Joggler was never sold in the US therefore has no FCC ID on it. The Verizon Openpeak devices that I have came from Openpeak and are labeled with FCC: Prototype.

I do have another Verizon OpenPeak telephony device that is much cheaper made (and were selling for more than the Openpeak 1-2 devices) with a resistive screen and stylus and an ARM based CPU. These were not made in China and rather made in India. Non hackable.
